Windows 7 & Server 2008 R2: Windows cannot access \\xx\xx

We're running 3 Windows 7 machines and one Windows server 2008 R2 box, over a gigabit Ethernet network.  I shared out an entire drive (our data drive).  When creating the share I edited the permissions for 'Everyone' to FULL (read/write/delete).  

The windows 7 boxes all do the same thing:  They can connect to the share without issue and can create new files.  However, when they try to open folders, edit file or folder names, or move files, Windows Server get's confused and gives the above error message, instead of allowing the FULL permissions that we set.  

All three boxes are connecting to the shares using the Administrator name and password (it's a small, private office network with no security concerns).

Why would Server 2008 block the Administrator from viewing or changing files?
